Die Frantoiana-Suppe entstand als Gericht der toskanischen Bauerntradition, das mit Gem\u00fcseabf\u00e4llen und trockenem Brot zubereitet wurde. Sie wurde verwendet, um das frisch gepresste neue \u00d6l zu testen. Heute gilt sie als einfache, rustikale Delikatesse, die perfekt f\u00fcr den Winter ist und den fruchtigen Geschmack des Oliven\u00f6ls Extra Vergine unterstreicht, ein wesentliches Element dieses Rezepts.  <\/p>\n\n<p><strong>Zubereitungszeit<\/strong>: 30 Minuten <br\/><strong>Garzeit<\/strong>: 1 Stunde <br\/><strong>Schwierigkeitsgrad<\/strong>: Mittel<\/p>\n\n<h3 class=\"wp-block-heading\">Zutaten (f\u00fcr 4 Personen):<\/h3>\n\n<ul class=\"wp-block-list\">\n<li>250 g bereits gekochte Cannellini-Bohnen<\/li>\n\n\n\n<li>250 g Borlotti-Bohnen<\/li>\n\n\n\n<li>250 g Bohnen aus der Toskana<\/li>\n\n\n\n<li>2 mittelgrosse Kartoffeln<\/li>\n\n\n\n<li>2 Zwiebeln<\/li>\n\n\n\n<li>3 Karotten<\/li>\n\n\n\n<li>2 Seeteufelrippen<\/li>\n\n\n\n<li>1 Lauch<\/li>\n\n\n\n<li>1 Bund Schwarzkohl<\/li>\n\n\n\n<li>1 Bund Mangold<\/li>\n\n\n\n<li>5 EL <strong><a href=\"https:\/\/www.ilbottaccio.it\/de\/produkte\/toskanisches-natives-olivenol-extra\/alles-frantoiano\/\">Frantoiano Oliven\u00f6l <\/a><\/strong><\/li>\n\n\n\n<li>Salz<\/li>\n\n\n\n<li>schwarzem Pfeffer<\/li>\n<\/ul>\n\n<h3 class=\"wp-block-heading\">Verfahrensbeteiligte:<\/h3>\n\n<ol class=\"wp-block-list\">\n<li><strong>Gem\u00fcsep\u00fcree zubereiten<\/strong>: Mit Zwiebeln, einer Karotte und Sellerie einen Schneeball zubereiten, dabei das Gem\u00fcse m\u00f6glichst nicht zu sehr zerdr\u00fccken. In einem dicken Topf (vorzugsweise aus Gusseisen) das <strong><a href=\"https:\/\/www.ilbottaccio.it\/de\/produkte\/toskanisches-natives-olivenol-extra\/alles-frantoiano\/\">Olio Extravergine Tutto Frantoiano<\/a><\/strong> erhitzen und das zerkleinerte Gem\u00fcse hinzuf\u00fcgen, bei mittlerer Hitze anbraten lassen, bis es weich ist.<\/li>\n\n\n\n<li><strong>Kartoffeln und Karotten zubereiten<\/strong>: W\u00e4hrenddessen die Kartoffeln sch\u00e4len und in mittelgrosse St\u00fccke schneiden. Die restlichen Karotten ebenfalls putzen, abschneiden, sch\u00e4len und grob in Scheiben schneiden. In den Topf mit dem Bratgut geben und gut umr\u00fchren.  <\/li>\n\n\n\n<li><strong>Blattgem\u00fcse nach Wahl zugeben<\/strong>: Die Mangold waschen, dabei den Boden entfernen und grob zerkleinern. Den Schwarzkohl herausbl\u00e4ttern, die harte Mitte abschneiden und das Blatt zerkleinern. Beide Gem\u00fcse in den Topf geben und vermischen, um die Aromen zu vermengen.  <\/li>\n\n\n\n<li><strong>Bohnen p\u00fcrieren<\/strong>: Nehmen Sie die Cannellini-, Borlotti- und Toskana-Bohnen mit etwas Kochwasser und p\u00fcrieren Sie sie zu einem glatten P\u00fcree. F\u00fcgen Sie dieses P\u00fcree zu den Gem\u00fcse hinzu. F\u00fcgen Sie nun auch genug Wasser hinzu, um alle Zutaten zu bedecken. Salzen und pfeffern nach Belieben, dann den Topf teilweise abdecken und ca. 40-50 Minuten k\u00f6cheln lassen, dabei gelegentlich umr\u00fchren.  <\/li>\n\n\n\n<li><strong>Brot r\u00f6sten<\/strong>: In der Zwischenzeit das Brot aufschneiden und bei 200\u00b0C 3-4 Minuten im Ofen toasten, bis es knusprig ist.<\/li>\n\n\n\n<li><strong>Die Suppe fertig<\/strong>: Wenn die Suppe fertig ist, die restlichen ganzen Bohnen dazugeben und nochmals mit Salz und Pfeffer abschmecken.
