Ingredients

  • 3 Eggs
  • 350 g of flour 00
  • 150 g of sugar
  • 180 ml of milk
  • aroma of vanilla
  • 1 lemon, grated
  • 1 sachet of yeast
  • 80 ml of Lemon Extra Virgin Oil
  • almonds and sugar flakes

Procedure

Preparation of eggs:

  • Separate the egg white from the yolk, putting the yolks in one bowl and the egg whites in another.
  • Whisk the egg whites and set aside.

Preparation of the dough:

  • Add the sugar to the yolks and mix well.
  • Combine the vanilla aroma, the lemon extra virgin olive oil and milk, continuing to mix until smooth.

Addition of dry ingredients:

  • Pour the flour and then the yeast, stirring until a smooth dough is formed.

Flavour and add the egg whites:

  • Add the lemon to the mixture and mix well.
  • Gently incorporate the egg whites, stirring with movements from bottom to top to keep the air in the dough.

Preparation and garnish:

  • Transfer the dough into a previously buttered and floured dove mold.
  • Garnish the surface with almonds and sugar flakes.

Cooking:

  • Bake in a preheated oven at 180°C for about 40 minutes, or until the dove is golden brown and cooked inside.
  • Let it cool completely before serving, so that the consistency is perfect both visually and on the palate.
