Ingredients:

8 slices of eggplant in extra virgin olive oil

200 g of mozzarella

Tuscan extra virgin olive oil

8 tomatoes in extra virgin oil

100 g of rucola

Procedures:

Slice 200 g of milk mozzarella and drain on kitchen paper towels. Drain 8 tomatoes in extra virgin oil and 8 slices of eggplant in extra virgin oil; clean and wash 100 g of rocket, then dry with the special centrifuge. Open in your pocket 4 Arabic rolls and stuff them with half of the rucola, mozzarella slices, sliced spicy salami (120 g in all). Let it be followed by a layer of tomatoes and eggplant in oil and finished with the remaining rucola. Season with a dash of extra virgin olive oil and a pinch of salt.
